Turkey a la King - The answer to your Turkey Leftovers!
After you made your wonderful Thanksgiving turkey and shared that delicious stuffing with all, you packed up your leftovers and threw them in the fridge. Now, a few days later, you're wondering what on Earth to do with all those leftovers! I mean, seriously, who needed that 15 pound turkey to feed four people anyway?! No worries. I have a fabulous recipe that will easily use up some of that delicious leftover turkey without forcing you to eat the same meal for the next week.

Ingredients for filling: *NOTE: I sprinkled the spices on and did not measure. I recommend sprinkling a little of each over the vegetables until it smells good. :) Directions for Filling: In a large saucepan, melt the butter and saute the onions for about 2-3 minutes. Then add the frozen vegetables and all spices (including salt and pepper). Cook for another 3-5 minutes or until vegetables are tender but not mushy. Add the chicken broth and turkey and bring to a boil, cooking for 2-3 minutes or until heated through. Whisk the half-and-half with the flour until well combined. Then slowly whisk the flour mixture into the vegetable mixture. Bring to a bowl and then reduce to medium, stirring occassionally. Ingredients for Crust: Directions for Crust: Spray four ramekins with butter-flavored spray and push one-quarter of the dough into each ramekin. Then cook for 11-13 minutes at 450F, or until golden brown on the edges and bottoms thoroughly cooked. Use a small spoon or ladel to make a dent in the biscuits for the filling. Then ladel in the filling until just overflowing. Allow 5-10 minutes to cool before eating. This meal was incredibly filling and tasty! Enjoy your leftover turkey in style! |
