My mom makes these incredible enchiladas that have been my favorite for a long time. When she invited us over this time, I decided it was time for me to learn how to make them myself. Now I will pass this easy but delicious secret on to you!
After meeting my husband for lunch and eating nachos piled high with toppings, I decided Nachos would be a perfect 15 minute meal try add to the blog. Another taco-inspired meal for you all to enjoy: taco dip! Usually I use this as an appetizer, but occasionally we do make it into more of a salad-type meal and both ways are truly fantastic. In addition to its versatility, taco dip requires few ingredients and minimal prep time! Let's get to it...

My mother has always made the BEST lasagna I've ever had. Whenever we went to a restaurant or over to someone else's house and they were serving lasagna, it just never compared to my mom's homemade lasagna. The sauce wouldn't be quite right or there wouldn't be enough cheese or, worst of all, there would be sausage in the lasagna! I mean, sausage?!
