Thai Chicken Skewers with Peanut Sauce - Perfect for a Luau!

I was recently asked to be the cook for a Luau. As I researched what kinds of foods would typically be found at such an event, I came across a variety of fun foods going beyond the pineapple that initially popped into my head. When I found a recipe for Thai Chicken Skewers, I knew that had to go on the list. 

Meals in 15 Minutes or Less - Lunch 3: Ham & Turkey Wraps

For our third Meal in 15 Minutes or Less lunch, we are going to make a ham and turkey wrap.  This beautiful wrapped sandwich is easy to make and, because the tortilla does not get soggy as quickly as regular bread, it can be made in advance! 

Meals in 15 Minutes or Less - Breakfast 3: Oatmeal

Midway through the week now and we are ready for our third Meal in 15 Minutes or Less breakfast.  Today we will be cooking up some oatmeal topped with brown sugar and cinnamon.  This simple but hearty breakfast tastes good, is good for you, and will keep you going until lunch!  Let's get started!

Raspberry Chocolate Cake with Chocolate Ganache

Congratulations to Laura P. for winning Casa de Lindquist's first ever recipe contest with a recipe for a Chocolate Raspberry Cake with Ganache frosting! While it was a bit labor-intensive, this chocolate raspberry cake is incredibly beautiful and delicious. 
I couldn't help but make a few changes to the submitted recipe so here's the modified version!  Hope you enjoy!

Meals in 20 Minutes or Less - Dinner 2: Broccoli Cheese Soup

I LOVE soup! More specifically, I love any kind of soup with a cheesy or creamy base. Creamy chicken wild rice soup, broccoli cheddar soup, and cream of just about anything soup makes me go weak in the knees (or would that be weak in the taste buds?)! Soups are amazing as a side to a meal or as the meal itself. So I thought tonight we would attempt our hand at making a broccoli cheese soup in 20 minutes or less.

Meals in 15 Minutes or Less - Lunch 2: Italian Pasta Salad

My husband doesn't much care for pasta salad, so I usually make it for myself during my summer break. I have always enjoyed cold pasta salad, especially of the Italian variety! There is something about fresh veggies cut up with noodles and pepperoni! Plus that Zesty Italian dressing that pulls the dish together! It's a refreshing summer dish.

Meals in 15 Minutes or Less - Breakfast 2: PB Rollups!

On our second day of Meals in 15 Minutes or Less, we are going for a simple breakfast snack that will keep you satisfied and travels well.  They are called Peanut Butter Rollups!  With only 3 ingredients, this snack is not only easy to make but easy on the wallet and good for you!

Meals in 20 Minutes or Less - Dinner 1: Curried Broccoli Alfredo Pasta!

For our third meal today we will up the time limit a bit due to the nature of dinner being somewhat more intensive.  Our dinner Meal in 20 Minutes or Less is going to be one of my favorites: curried broccoli with alfredo sauce on pasta.  I was skeptical the first time my husband made it for me, but it has quickly become one of my favorite meals!  And with some minor alternations from the original, we will make this dinner from fridge to plate in 20 minutes.  So

Meals in 15 Minutes or Less - Lunch 1: Pizza

For our second Meal in 15 Minutes or Less today, we are going to make pizzas using English muffins as the crust.
These little pizzas are incredibly simple to make and easy to bring to work!
From fridge to plate, they take about 13 minutes.

Meals in 15 Minutes or Less - Breakfast 1: Omelet

I know so many people who skip breakfast or think a granola bar passes as breakfast because they "don't have time" to make breakfast. Well I'm here to say that a home-cooked breakfast meal is less than fifteen minutes away! Breakfast foods are probably one of the quickest meals of the day to cook up and can be as simple as fried eggs and toast!
