Weekly Menu to Help Lose Weight!

Here's another weekly menu.  Using the following colorful and delicious menu, I was able to lose about 1 pound of my Christmas weight over the course of a week! Yay!

BBQ Pulled Chicken Sandwich

We have been on a pulled chicken craze lately. We bought roughly four pounds of chicken and just started boiling it up to see what kinds of tasty meals we could make. After a large batch of Chicken Tacos, we went for some BBQ style chicken.

Simply Fried Eggs for Breakfast!

I used to babysit all the time in middle / high school. I had a blast, especially when the kids started getting interested in cooking! We would always start with something simple but involving an oven or stove because kids feel accomplished when they get to use the oven or stove for the first time. Thus, eggs are one of my favorite things to teach first-time cooks (of all ages) how to make. They are versatile in their uses and tasty all by themselves.

Grilled Cheese, Tomato Soup, and Side Salad!

Sometimes the best meal is a simple homemade meal. My husband and I love grilled cheese sandwiches of all kinds. From gourmet to "slime cheese," we just can't get enough!

Easy Pulled Chicken Tacos

In an effort to find easy, cost-effective but healthy foods, we stumbled across this simple recipe for Pulled Chicken Tacos. We love pulled chicken and were excited by the possibilities of this simple recipe. Having used frozen chicken to make pulled chicken before, we decided to go that route as you get roughly 2 pounds of frozen chicken for every 1.25 pounds of "fresh" chicken.

Sticking to those (Pesky) New Year's Food Resolutions!

It has been a month since my last post due to a particularly hectic December, so I shall make my first post of the New Year epic. This particular post will be a little different in style; I aim to provide a suggestion for how to stick with a New Year's Resolution of eating healthier and losing weight. As I am on the WeightWatchers Points Plus program, I will also provide a listing of how many points each meal is worth.

Roasted Tomato Cream Sauce with Pasta!

This past fall I had the pleasure of attending a pasta-making course at my husband's place of employment.

Turkey a la King - The answer to your Turkey Leftovers!

After you made your wonderful Thanksgiving turkey and shared that delicious stuffing with all, you packed up your leftovers and threw them in the fridge.

Beef Stroganoff - The Best in Comfort Foods!

Betty Crocker really does have it all for the Best of Homecooked Comfort Foods.  If you don't own your own copy of Betty Crocker Cookbook, you should go buy one!  But in the meantime, you must at least have access to this recipe: Beef Stroganoff.

It's simple, delicious, and ready in roughly 1 hour.  Check it out!

Leftover Fajitas? Make a Fajita Crunchwrap Supreme!

Have I mentioned enough times yet that my husband LOVES anything in a tortilla?  In particular, he is a huge fan of Taco Bell, including their Crunchwrap Supreme.  After spotting step-by-step instructions for how to make one at home, I decided to try it out with some leftover fajitas.  I daresay it was even better than Taco Bell's version!

Check it out.
