Weekly Menu to Help Lose Weight!

Here's another weekly menu.  Using the following colorful and delicious menu, I was able to lose about 1 pound of my Christmas weight over the course of a week! Yay!

BBQ Pulled Chicken Sandwich

We have been on a pulled chicken craze lately. We bought roughly four pounds of chicken and just started boiling it up to see what kinds of tasty meals we could make. After a large batch of Chicken Tacos, we went for some BBQ style chicken.

I used to babysit all the time in middle / high school. I had a blast, especially when the kids started getting interested in cooking! We would always start with something simple but involving an oven or stove because kids feel accomplished when they get to use the oven or stove for the first time. Thus, eggs are one of my favorite things to teach first-time cooks (of all ages) how to make. They are versatile in their uses and tasty all by themselves.

Having used frozen chicken to make pulled chicken before, we decided to go that route as you get roughly 2 pounds of frozen chicken for every 1.25 pounds of "fresh" chicken.

Leftover Fajitas? Make a Fajita Crunchwrap Supreme!

Have I mentioned enough times yet that my husband LOVES anything in a tortilla?  In particular, he is a huge fan of Taco Bell, including their Crunchwrap Supreme.  After spotting step-by-step instructions for how to make one at home, I decided to try it out with some leftover fajitas.  I daresay it was even better than Taco Bell's version!
